When winter begins to give way and the day time temperatures rise above
freezing, we gather the sap from the + 350 buckets we hang from the
sugar maples in our forest. As stewards of this forest, we strive to
support ecological diversity of the sugar bush. With the help of
friends and family, we gather the sap, dump it into a tank, and haul
the tank to the sugar house on a sled pulled by our tractor. The sap
is boiled into syrup using a wood fired evaporator. We bottle the syrup
on our kitchen wood cookstove. We are able to make syrup until the
night time temperatures remain above freezing and the buds on the trees
begin to swell (about 2 to 7weeks). We love the work that we put into
making this rich and delicious syrup. We hope that you love the taste!
